HOLIDAY RAISIN BREAD | |
3 extra ripe, med. bananas, peeled 1 c. sugar 1 c. butter, softened 1 egg 1 c. dairy sour cream 2 tsp. grated lemon peel 3 1/2 c. flour 4 tsp. baking powder 1 tsp. ground cinnamon 1/4 tsp. salt 1/4 tsp. ground allspice 1 1/2 c. raisins Puree bananas in blender (1 1/2 cups). Cream sugar and butter until fluffy. Beat in egg, sour cream, lemon peel, bananas. Combine dry ingredients and raisins. Beat into banana mixture. Bake in 2 well greased 8 1/2" x 4 1/2" loaf pans at 350 degrees for 50 to 60 minutes. Cool 10 minutes, invert on rack to complete cooling. Makes 2 loaves. |
