FRENCH - FRY BATTER 
5/8 c. sifted flour
1/2 tsp. salt
1/2 tsp. dry mustard
1 egg
1/4 c. milk

1. Sift flour, salt and mustard together.

2. Beat egg well and add milk, stirring.

3. Add milk mixture to flour mixture, stirring until blended.

This is an excellent coating for eggplant (sticks or slices), onion rings and chicken.
