3/4 c. sugar
1 egg
1 1/3 c. sifted flour
1 tsp. cream of tartar
1/2 tsp. baking soda
1/8 tsp. salt

Heat oven to 400 degrees (moderate heat). Mix shortening, sugar and egg thoroughly. Sift remaining ingredients together and stir into first mixture. Roll into balls the size of small walnuts.

Roll in mixture of 1 tablespoon sugar and 1 teaspoon cinnamon. Place 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes until lightly browned but stiff soft. (They puff up at first, then flatten out.) Cool; store in covered jar.

Makes 2 1/2 dozen 2 inch cookies.
