PARMESAN CHICKEN 
Boneless chicken breasts (8 halves)
1/2 c. melted butter
1 c. crushed Ritz crackers
1/2 c. Parmesan cheese

Mix crumbs, cheese and butter. Roll chicken in mixture. Place on a greased shallow pan. (Save leftover crumbs for later.) Refrigerate at this point.

SAUCE (Make Ahead) :

3/4 c. water
1 (4 oz.) jar mushrooms
1 can cream of chicken soup (Campbell's)
8 oz. sour cream

Mix together and pour over when ready to bake. Top with extra crumbs. Bake at 350 degrees for 1 hour and 15 minutes.
