CHRISTMAS ORANGE PECANS 
1 1/2 c. sugar
1/2 c. water
Grated rind of 1 orange
3 tbsp. orange juice
Pinch of salt
12 oz. pecan halves

Boil sugar in water until mixture spins a long thread when tested in water. Remove from heat. Add orange rind, orange juice and salt. Beat a few times, add pecans and beat until creamy. Pour onto waxed paper and separate.
