CREME DE MENTHE COOKIES 
1/2 c. butter, softened
3/4 c. sugar
1 egg
2 c. all purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
3/4 tsp. vanilla extract
21 creme de menthe wafers, halved
Sifted powdered sugar

Cream butter; gradually add 3/4 cup sugar, beating well. Add egg, stirring well. Combine flour, soda and salt; add to creamed mixture. Stir in vanilla. Shape dough into two 8 x 1 1/2 inch blocks. Wrap in plastic wrap, and freeze several hours or overnight. Cut dough into 3/8 inch slices; place a creme de menthe wafer half in center of half the slices. Top with another slice of dough. Gently press edges to seal. Bake at 350 degrees for 10 minutes or until lightly browned. Cool cookies on wire racks. Sprinkle with powdered sugar. Yield: 3 1/2 dozen.
