GREEN CHILI AND CORN ZUCCHINI | |
In processor while running, drop through feeder tube: 2-3 cloves garlic 2 Anaheim green chilies 6 green onions (in 6ths) Cube into 1/2 inch chunks 2 zucchini and saute with onion, garlic and chilies. Do not allow to brown. Add: 1/4 tsp. salt and pepper 1/3 c. heavy cream 1 c. white corn kernels, stripped from 2 ears of corn Simmer for 5 minutes. Add 1/2 cup shredded Monterey Jack cheese off heat, stir to blend and melt. Serve. |
