GORGONZOLA AND WALNUT SALAD 
1 tbsp. Dijon style mustard
3 tbsp. white wine vinegar
1 tbsp. fresh lemon juice
1/2 c. walnut oil
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1 head romain lettuce, torn in bite sized pieces
1/2 lb. Gorgonzola or other blue veined cheese, crumbled
1 c. coarsely chopped walnuts
1 Red Delicious apple

Put all dressing ingredients in a jar. Cover securely and shake until slightly thickened, creamy, and well combined. Set aside.

In a salad bowl, place lettuce, cheese and walnuts. Slice the unpeeled apple into the salad. Add enough dressing to just coat the leaves. Toss and serve. NOTE: Gorgonzola is a semisoft Italian blue cheese.
