SPANISH RICE CASSEROLE 
1 lb. ground beef
1/4 c. chopped onion
1 (15 oz.) can chili beans
1 (15 oz.) can Spanish rice
1 (8 oz.) pkg. corn chips
1 c. shredded Cheddar cheese

Brown ground beef with onion in large skillet, stirring until ground beef is crumbly; drain. Stir in beans and rice. Sprinkle 1/3 of the chips. Into 9 x 13 inch baking dish, layer ground beef mixture, remaining chips, and cheese (half at a time). In prepared dish, bake at 350 degrees until bubbly. Yield: 6 servings.
