PECAN BRITTLE | |
2 c. sugar 1 c. white syrup 1 c. water 1 tsp. baking soda 1 tbsp. butter 2 c. chopped pecans Combine sugar, water, and syrup in heavy saucepan. Cook to soft ball stage when dropped into water or use candy thermometer. Add pecans. Continue to boil rapidly until mixture crackles hard when dropped in cold water. Remove from stove, add butter and soda; stir until foamy. Pour out onto two large cookie sheets that have been buttered well. As soon as can be handles, start pulling out as thin as possible. Cool and crack into pieces. |
