ENGLISH CHRISTMAS BREAD | |
1 pkg. dry yeast 1 1/4 c. warm water 2 tbsp. sugar 2 tbsp. shortening 2 tsp. salt 3 c. flour 1/4 tsp. nutmeg 1/2 tsp. allspice 1/2 tsp. caraway seed 1/4 c. currants 1/4 c. raisins 1/4 c. cut up citron Dissolve yeast in water in a large bowl. Beat in sugar, salt, shortening, and 2 cups flour. Beat on low 30 seconds. Beat on medium 2 minutes. Stir in remainder of flour, spices, fruits. Cover and let rise about 1 hour. Grease 8 1/2 inch loaf pan or two 1 pound coffee cans. Punch down dough. Beat 25 strokes. Place in pan. Let rise 45 minutes. Heat oven to 375 degrees. Bake 45-50 minutes. Remove and brush tops with butter. |
