TURKEY FAJITAS 
1 c. thinly sliced onion
3 tbsp. vegetable oil, divided
2 tbsp. lime juice
2 garlic cloves, minced
1/2 tsp. dried oregano
1/2 tsp. ground cumin
1/2 tsp. chili powder
1 pkg. turkey breast cutlets in strips
1/2 c. green pepper strips
1/4 c. chopped cilantro
8 sm. flour tortillas, warmed
Sour cream (opt.)

In shallow dish, combine onions, 2 tablespoons oil, lime juice, garlic, oregano, cumin and chili powder. Add turkey strips, marinate 1 hour. In large skillet pour over medium high heat, heat 1 tablespoon oil. Add turkey, marinade, green pepper and cilantro. Saute 3 to 4 minutes, stir often until turkey is no longer pink and vegetables tender crisp. Roll into warm tortilla, garnish with sour cream.
