HOT POTATO SALAD 
6 medium potatoes
1/4 lb bacon
1 onion, chopped
2 tsp. sea salt
1/4 tsp. garlic powder
1/4 tsp. black pepper
pinch of rubbed sage and thyme (optional)
1/2 cup hot water
2 tbsp. vegetable or olive oil

Boil potatoes and after draining, peel and slice them while warm. Cover with a dressing made by frying the bacon (cut in small dice) over low heat, then add the other ingredients.

This potato salad is best when served hot.
