FRESH FRUIT COBBLER 
1/4 c. butter
1/4 c. sugar
1 egg
1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1 tsp. vanilla extract
3 to 4 c. fresh fruit, sliced
1 lemon
1/8 to 1/4 c. cinnamon sugar, depending on fruit sweetness

Beat butter until creamy. Add sugar and beat until fluffy. Add egg, beating well. Add vanilla and milk to butter mixture, mix well. Combine flour, baking powder and salt in small bowl. Mix half of the flour mixture into the milk batter. Add remaining flour mixture and beat until smooth and fluffy. Spread batter evenly in a greased 8 inch pan. Cover with a thick layer of fresh fruit. Sprinkle lightly with lemon juice and cinnamon sugar. Bake in 350 degree oven for 40 to 45 minutes or until fruit is bubbly and toothpick comes out clean. Serve warm or at room temperature with pitcher of cold heavy cream or ice cream.
