VEGETABLE CASSEROLE 
1 med. onion, chopped or 6 green onions, chopped
2 crushed garlic cloves
Zucchini, diced
Summer squash, diced
Eggplant, diced
Fresh mushrooms, sliced

Saute onions and garlic in a little butter. Stir in rest of ingredients and cook about 3 minutes. Place in shallow casserole. Cover with shredded sharp cheese. Bake at 350 degrees for about 30 minutes or until done and brown.
