HARVARD PICKLED BEETS 
1/2 c. sugar
1/4 c. vinegar
1/4 c. canned beet juice
1 can plain beets (whole or sliced, drained)

In medium size pot on stove; add sugar, vinegar, and beet juice. Boil 5 minutes.

Add drained beets and let stand over low heat 30 minutes. Can serve warm or chill first.
