GOOD BROWN STEW | |
2 lbs. boneless beef chuck, cut in 1 inch cubes 4 c. hot water 1 tsp. Worcestershire sauce 1 clove garlic, minced 1 med. onion, sliced 1 tsp. lemon juice 2 sm. bay leaves 2 tsp. salt 1/2 tsp. pepper Pinch of allspice 1 tsp. sugar 6 carrots, halved 8 sm. onions 3 potatoes, quartered Thoroughly brown meat on all sides in hot fat. Add all ingredients, except vegetables. Cook for 2 hours. Add vegetables and continue cooking 30 minutes. Remove meat and vegetables and add a flour and water thickening, if you desire. Serves 6-8. |
