SWISS OVEN OMELET 
6 slices bacon, partially cooked
1 tbsp. bacon drippings
1/3 c. finely chopped onion
8 eggs
1 c. milk
1 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped parsley
1 (8 oz.) pkg. Swiss cheese, cut into strips

Cook onion in bacon fat until transparent, but not brown. Combine eggs, milk, salt, pepper, and beat until light with electric mixer. Add onion and parsley. Pour into 1 1/2 quart casserole. Add Swiss cheese strips. Top with bacon slices. Bake at 350 degrees for 40 minutes. Serve immediately.
