CARROT CAKE 
3 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. vanilla
1 1/4 c. oil
1/2 tsp. salt
3 eggs
2 finely grated carrots
1 1/2 c. pecans
1 sm. can crushed pineapple

Mix all of above except eggs. Beat well, then add eggs, one at a time. Bake at 350 degrees for 35 minutes, using 2 round layer cake pans.

FILLING:

8 oz. pkg. Philadelphia cream cheese
1/2 box powdered sugar
1 stick butter
2 tsp. vanilla
1 c. nuts

Mix cream cheese, vanilla, butter and sugar. Then add nuts. Spread between layers and on top of cake.
