ZUCCHINI BREAD | |
1 c. walnuts 4 eggs 2 c. sugar 3 1/2 c. flour (unsifted) 1 1/2 tsp. baking powder 1 c. oil 1 1/2 tsp. salt 1 tsp. cinnamon 3/4 tsp. baking soda 2 c. grated zucchini 1 c. raisins 1 tsp. vanilla Chop walnuts into medium size pieces. Beat eggs. Gradually beat in sugar then oil. Combine dry ingredients. Add to the first mixture alternately with zucchini. Stir in raisins, walnuts and vanilla. Turn into 2 greased and lightly floured loaf pans (9 x 5 x 2 3/4 inch). Bake on lowest rack in 350 degree oven for 55 minutes or until loaves test done. (Bread freezes.) |
