ZUCCHINI BREAD 
3 eggs
1 c. oil
2 1/2 c. sugar
2 c. peeled and grated zucchini
3 tsp. cinnamon
nuts and raisins (if desired)
1 tsp. baking soda
3 tsp. vanilla flavoring
3 c. all-purpose flour
1 tsp. salt
1/4 tsp. baking powder

Beat eggs, sugar and zucchini. Add remaining ingredients, mixing lightly by hand.

Bake in a greased and floured loaf pan at 325°F for 1 hour and 20 minutes or use baking sheet for 1 hour.
