ZUCCHINI BREAD 
3 c. flour
3 eggs
2 c. sugar
1 c. oil
1 tsp. vanilla
2 c. grated zucchini
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. sour cream
1 c. chopped nuts

Preheat oven to 350 degrees; grease 2 (9 x 5 x 3 inch) loaf pans. Sift flour into large bowl. Beat eggs and add with rest of ingredients to flour. Mix well making sure all of zucchini and flour is mixed in. Scrape bowl often; mix several minutes. Pour into greased pans. Bake 1' 20" - let cool in pans or wire racks and store. Also freezes well.
