ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated, peeled zucchini
1 tsp. vanilla
3 c. sifted flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. baking powder
3/4 c. chopped nuts

Beat eggs to light and foamy. Add oil, sugar, grated zucchini and vanilla. Mix lightly but well. Add flour, salt, soda, cinnamon and baking powder sifted together. Mix until blended. Stir in chopped nuts.

Pour batter into two greased 9 x 5 x 2 inch loaf pans. Bake at 325 degrees for 1 hour or until bread tests done with wooden pick. Let set on cake rack 10 minutes. Remove from pans and cool on rack. Makes 2 loaves.
