ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 tsp. vanilla 3 c. flour 2 c. grated zucchini 1 c. crushed pineapple, drained 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1/2 c. raisins (optional) 1 c. nuts (optional) Beat eggs, sugar, vanilla, and oil until fluffy. Add sifted dry ingredients. Stir in zucchini, pineapple, raisins, and nuts. Pour into 2 greased bread pans and bake at 350 degrees for 1 hour. |
