“MOMMA BEAL'S BANANA NUT BREAD” IS IN:

MOMMA BEAL'S BANANA NUT BREAD 
2 cups white flour
1/2 tsp. salt
2 eggs
2 tsp. baking powder
1/2 cup (1 stick) butter, softened
1 1/2 cups ripe mashed bananas
1 cup sugar
3/4 cup chopped walnuts or pecans

Sift flour with baking powder and salt. Cream butter, gradually beat in sugar. Add an egg at a time, beating well after each addition.

Add mashed bananas, mix well. Blend in sifted ingredients. Fold in nuts.

Pour into greased 9x5x3-inch loaf pan.

Bake at 325°F for 1 hour and 25 minutes.

Serve warm or cold with butter.

This has been my go to banana bread recipe for years now. I have tweaked it with a tablespoon of black molasses and add 2 cups of mashed bananas for a moister bread. I also use dark brown sugar and leave out the nuts. Its delicious warm or cold add a hot custard sauce for dessert.. Yum! Make sure to let it cool completely before covering with plastic wrap or the top will go sticky.

I love this recipe! I love adapting it to however I want by adding/subbing EVOO, whole wheat flour, brown sugar, cinnamon/nutmeg/allspice, pecans, flax seed meal, chocolate chips, orange zest, possibilities are endless! Always comes out tasty.
