GAZPACHO 
2 tomatoes, peeled & seeded
1 green pepper, seeded
1/4 c. fresh parsley
1/4 c. fresh basil
1/4 c. fresh chives
1 clove garlic, crushed
Juice from 1/2 lemon
3 tbsp. olive oil
3 c. water
1 cucumber, grated
1 onion, sliced thin

Chop tomatoes, pepper, parsley, basil, chives and garlic. Combine in a large bowl. Mix together lemon juice, oil and water. Pour over vegetables and stir. Add cucumber and onion; mix thoroughly. Chill 6 hours and serve.
