GREEK POTATOES 
Potatoes
live oil
Basil
Salt
Oregano
Thyme

Thinly slice 5 or 6 good size potatoes. Combine oil with 1/2 teaspoon each crushed herbs and salt. Pat potatoes dry between folds of paper towels. Mix potatoes and oil mixture and spread on a baking sheet that has sides to catch the oil. Bake at 425 degrees for about 45 minutes until potatoes look browned. Some will be crisp, others soft. Serve with a spatula.
