FRUITED SHORTBREAD COOKIES 
1 1/2 c. powdered sugar
1 c. butter, softened
1 egg
1 pkg. (9 oz.) none such condensed mincemeat, crumbled
1 tsp. vanilla
2 1/2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar

Beat powdered sugar and butter until light and fluffy, beat in egg. Mix in mincemeat and vanilla and stir in remaining ingredients. Shape dough into 1 1/4 inch balls. Place 2 inches apart on ungreased cookie sheets; flatten slightly. Bake at 375 degrees for 10 to 12 minutes until light brown. Cool completely.

LEMON FROSTING:

2 c. powdered sugar
2 tbsp. softened butter
2 tbsp. water
1/2 tsp. lemon peel

Beat all ingredients together, adding 1/2 teaspoon water if necessary, to spreading consistency.
