SHORTBREAD COOKIES 
Makes 20 to 22 dozen.

1 lb. (10 oz.) powdered sugar
1/2 oz. salt
1/4 oz. lemon or orange gratings
2 oz. vanilla
1 lb. (8 oz.) butter
1 lb. shortening
6 eggs
2 oz. honey
3 lb. (12 oz.) pastry flour

Place first 6 ingredients in small mixing kettle. Using paddle, cream in second speed until light for 4 to 5 minutes. Scrape down. Combine eggs and honey and mix well.

Scrape down 2 to 3 minutes. Sift flour once add in first speed. Mix smooth. Avoid over mixing. Cookie dough may be rolled out on dusted cloth and cut with cookie dough may be rolled out on dusted cloth and cut with cookie cutters or rolled into strips and cut 12 to 5 to 6 oz. dough.

Wash lightly with egg wash before baking. Bake at 375 to 390 degrees for 10 to 12 minutes, depending on thickness.
