SCALLOPED SPINACH 
2 lbs. spinach
2 c. milk
4 tbsp. butter
Salt
2 eggs, beaten
2 c. bread crumbs
1/2 c. chopped bacon
Pepper

Wash spinach thoroughly. Drain and cook with a little water in covered pot over moderate heat for 8 to 10 minutes. Drain and chop the spinach. Add milk, the beaten eggs, 1 1/2 cup of the bread crumbs, melted butter; salt and pepper, then mix well. Sprinkle the remaining 1/2 cup bread crumbs and the chopped bacon on the top. Bake in moderate oven 350 degrees for 35 minutes.
