SPINACH SCALLOPED FRANKS | |
1/4 c. onions, chopped 6 tbsp. butter 1/4 c. flour 1 1/4 c. milk 2 c. shredded Cheddar cheese 1 (10 oz.) pkg. frozen spinach, drained 5 lg. cooked potatoes 1 lb. franks, cut into 1/2" pieces Melt butter. Cook onion until limp. Add flour. Add milk and cook, stirring constantly until mixture thickens. Add 1 1/2 cups cheese. Stir until melted. Stir in spinach. Arrange half slied potatoes in 11 3/4 x 7 1/2 inch baking dish. Top with half the franks and half spinach and half sauce. Repeat layers. Cover and bake at 350 degrees for 45-50 minutes. Top with remaining cheese. Bake until melted. 6-8 servings. |
