GRATED SWEET POTATO PIE 
For one pie grate 2 1/2 cups of raw sweet potatoes on coarse side of grater. In an unbaked pie shell, put a layer of sweet potatoes, then a layer of coconut. Keep layering potato and coconut until pie is full, making sure last layer is potato. To one cup of sugar, add 2 teaspoons of ground cinnamon. Stir until blended.

Spread sugar mixture over top of pie. Pour 1/2 cup milk into pie. Dot top of pie with butter and bake at 350 degrees until done. Don't try to dissolve all the sugar on top; it will be crunchy when done. If you like, when layering the potatoes and coconut, add some raisins.
