ZUCCHINI BREAD | |
3 eggs 1 c. vegetable oil 2 c. sugar 1 tbsp. vanilla 2 c. grated zucchini 1 c. finely-chopped nuts 2. c. flour 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. baking powder 1/4 tsp. baking soda 1 tsp. salt Beat eggs until light and fluffy. Add sugar, oil and vanilla. Mix until becomes thick. Add zucchini and stir thoroughly. Sift flour, cinnamon, baking powder, soda and salt. Mix with other ingredients until smooth. Add chopped nuts. bake in 2 greased and floured loaf pans for 1 hour at 350°F. |
