SWEET POTATO CASSEROLE 
Casserole:

3 c. cooked mashed sweet potato (or large can)
2 eggs
1 c. sugar
1 stick butter
1 c. evaporated milk
2 tsp. vanilla
pinch salt

Mix all of the ingredients completely and place in a greased oblong baking dish.

Topping:

1 c. brown sugar
1/3 c. flour
1/4 c. melted butter
1/2 c. chopped pecan
1 c. coconut (optional)

Mix till ingredients become crumbly. Sprinkle over potato and bake 30 to 40 minutes at 350°F.
