LESLIE'S AMAZING CORN DIP 
I had a hard time finding the cayenne pepper in the spice aisle. It is actually called Red Pepper. The brand I bought said Red Pepper in big letters and ground cayenne pepper in smaller letters.

4 (15 oz. ea.) cans Mexicorn (drained really well)
2 cups dairy sour cream (I use reduced fat)
1 cup mayonnaise
2 cups shredded Colby jack cheese (you can use the stuff that is already shredded)
3 or 4 green onions (scallions), chopped
1/4 cup fresh cilantro, chopped
1/4 to 1/2 tsp. cayenne pepper (start with 1/4 and add more according to taste)
1 tsp. lime juice (squeeze a fresh lime)
1 bag of supersize Fritos (for dipping!)

Mix it all together and chill overnight in refrigerator for best results.
