SPINACH-CORN PARMESAN 
1/4 c. minced onions
2 tbsp. melted butter
1 (16 oz.) can creamed corn
2 pkg. chopped spinach, cooked and drained thoroughly
1 tsp. vinegar
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. bread crumbs
2 tbsp. Parmesan cheese
2 tbsp. melted butter

Saute onions in 2 tablespoons butter. Combine this with corn, spinach, vinegar, and spices. Place in lightly greased, shallow baking dish. Top with bread crumbs and cheese, which have been tossed with melted butter.

Bake, uncovered, 400 degrees for 20-25 minutes or until browned. This is especially lovely with baked ham. Serves 6-8.
