PARMESAN CHICKEN NUGGETS (WITH DIPPING SAUCE) | |
3-4 chicken breasts, trimmed and cut into 1-inch cubes 3 eggs 4 cups Special K (or other corn flake cereal) 1 toasted English muffin, shredded 1 tbsp. garlic salt 1 tbsp. poultry seasoning 1/4 cup Parmesan cheese (the cheap kind works fine) 1/2 cup finely shredded Mozzarella cheese 3 cups vegetable oil, for frying Beat eggs in a shallow bowl. Pulverize cereal, muffin and seasonings together in food processor. Coat chicken in eggs, dip one side in shredded cheese then dredge through crumb mixture. Heat vegetable oil to 360°F. Carefully drop breaded chicken into oil, cook for 5 to 6 minutes or until golden brown. Remove from oil and set on paper towel to drain. Serve with your choice of dipping sauce, if desired. SOUR CREAM RANCH SAUCE: 1/2 cup dairy sour cream 1/2 cup Ranch dressing Mix well. GINGER MUSTARD SAUCE: 1/3 cup prepared yellow mustard 1/3 cup Dijon mustard 1/3 cup mayonnaise 1 tsp. ginger preserve or spread Mix well. Submitted by: Voodoo Maggie |
