POTATO PUFF CASSEROLE 
1 (8 oz.) pkg. cream cheese, softened
5 c. hot mashed potatoes
1 egg, beaten
1/2 tsp. salt
Dash of pepper
Dash of cayenne pepper
1/2 tsp. paprika
2 tbsp. minced chives or 1/2 tsp. dried onion

Combine softened cream cheese and hot potatoes, mixing until well blended. Add remaining ingredients, beat thoroughly and turn into buttered 1 1/2 quart casserole. Brush top with melted butter and bake in covered 350 degree oven for 40 minutes. Serves 6.
