CREDIBLY CREAMY RICE PUDDING 
I love to cook but don't have time for it and hate cleaning up afterwards. This recipe is easy, fast, there is no mess to clean up, and the kids love it.

1/2 c. rice
1/2 c. sugar
1 qt. milk
1 egg
1/2 tsp. salt
1 tsp. vanilla
1 c. raisins
3/4 tsp. cinnamon

In covered saucepan, over very low flame, cook rice, sugar and milk for 45 minutes. Remove from heat. Beat eggs; add 5 tablespoons of the cooked rice mixture to egg, one at a time, so that egg does not cook. Pour egg mixture into the main body of the rice mixture. Add salt, vanilla, raisins and cinnamon. Cover and let stand for about 10 minutes. Serving: Lots!
