SPINACH BALLS 
2 (10 oz.) pkgs. frozen chopped spinach
2 c. seasoned croutons or herb seasoned stuffing mix
2 eggs
1/2 c. butter, melted
1/2 c. grated Parmesan cheese
1/2 tsp. thyme
1/8 tsp. garlic powder
1 lg. onion, minced
Salt & pepper

Partially cook spinach. Drain well, squeezing out juice. If using croutons, crush slightly. Combine with remaining ingredients mixing well. Cover and chill 2 hours or longer. Shape into 1" balls. Microwave 1 to 2 minutes or bake on greased baking sheet at 350 degrees for 10 to 12 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
