VIDALIA ONION CASSEROLE 
3 vidalia onions, thinly sliced
1/2 c. chopped green pepper
Salt and pepper to taste
4 tbsp. pimento (optional)
1 c. milk
3 eggs
1/4 c. butter
2 tbsp. butter
2 c. shredded Swiss cheese
2 c. crushed Ritz crackers

Saute onion and pepper in 1/4 cup butter until tender. Remove from heat. Add pimento, salt and pepper. Beat eggs and add milk. Layer 1/2 of onion mix in casserole. Sprinkle 1/2 of cheese and 1/2 of Ritz crackers over the onion mix. Repeat layers with other half of onion and cheese. Pour egg mixture over this and top with remaining crackers. Heat 2 tablespoons butter and pour over top. Bake at 350 degrees until brown and bubbly, 20 to 30 minutes. Serves 6-8.
