SKILLET POLYNESIAN HAM AND RICE 
1 lb. cubed ham
2 tbsp. butter
1 can (8 oz.) pineapple chunks
2 c. quick rice
1 med. green pepper, chopped
1/4 c. chopped onion
1 (2 oz.) jar pimento

Brown ham, Drain pineapple, reserve juice. Add water to juice to make 1 2/3 cups liquid. Put liquid in pan, add rice, pepper, onions and salt, if desired. Bring to boil. Simmer 5 minutes. Add pineapple and pimento and serve.

Serves 4 or 6. Cooks in 10 minutes.
