HAM, CABBAGE AND RICE SKILLET | |
1 small green cabbage (about 1 lb) coarsely chopped 1 box (7 oz) yellow rice mix with seasoning packet 1 medium red bell pepper, chopped 3 medium scallions, sliced (reserve sliced green tops) 3 oz. lean ham, cut into 1/2 inch chunks (1 3/4 cups) In a large deep nonstick skillet, mix 2 cups water, cabbage, rice, seasoning packet, red bell pepper and white part of sliced scallions. Bring to a boil, reduce heat, cover and simmer 15 minutes. Stir in ham, cover and simmer 3 to 5 minutes longer until liquid is absorbed and rice and vegetables are tender. Sprinkle with the remaining scallion tops. Note: Chicken can be used in place of ham. |
