CRUNCHY CORNMEAL CHICKEN 
1 broiler chicken
1/4 c. cornmeal
1/4 c. whole wheat flour
1/4 tsp. oregano
1/4 tsp. marjoram
1/2 tsp. garlic powder
Freshly ground pepper
1 egg white, slightly beaten

Remove skin and fat from chicken. Rinse and pat dry with paper towel. Combine cornmeal, flour and seasonings. Dip each piece of chicken in egg white, then in cornmeal mixture.

Place chicken on a rack in a shallow pan. Bake, uncovered, in preheated 350 degree oven for 1 hour or until chicken is tender. Turn once so chicken browns evenly. Makes 4 servings.
