TUNA - CASHEW CASSEROLE 
1/4 lb. cashew nuts
1 med. size can Chinese chow mein noodles
1 can cream of mushroom soup (undiluted)
1/4 c. water
1 sm. can chunk style tuna, drained
1 c. finely diced celery
1/4 c. finely minced onion
Dash of salt and pepper
1 tsp. parsley flakes

Use salt only if unsalted cashews have been used. Set aside 1/2 cup noodles. Combine rest of ingredients in a 1 1/2 quart size casserole dish. Sprinkle top with reserved noodles. Bake, uncovered, in 325 degree oven for 40 minutes. Serves 6.

For a tasty change: Substitute cooked chunks of chicken for tuna and cream of chicken soup for the mushroom.
