STUFFED ARTICHOKE 
1/2 c. Italian bread crumbs
1/4 c. Parmesan cheese
2 cloves garlic, pressed or 1 tsp. crushed garlic
3 tbsp. green onions, chopped
2 tbsp. fresh parsley, chopped
1/8 tsp. thyme (optional)
1/4 tsp. salt
Big pinch of black pepper
1/4 c. olive oil
1 artichoke
1 lemon (cut) or lemon juice

To prepare artichokes, cut the stem and break off the small leaves from the base of artichoke. Trim so artichoke will stand solidly upright. Lay it on side and slice 3 quarters of an inch off the top of center cone of leaves. Trim off points of rest of leaves with scissors. Give artichoke a good solid lick at bottom to open leaves. Wash under cold running water. Rub cut portions of leaves with lemon juice.

Mix ingredients together and stuff artichoke leaves. Squeeze lemon all around artichoke after stuffed. Steam about 1 hour.
