SPINACH DIP 
1 box frozen spinach, thaw & remove most of water
1 can water chestnuts, cut into sm. pieces
1 c. sour cream (8 oz.)
1 box Knorr's vegetable soup mix (found in gourmet section of store)
1 c. mayonnaise (scant)

Mix all ingredients. Best if made a day in advance. Serve as a dip with celery, carrot, broccoli and cauliflower. Also good on crackers as a spread.
