SWEET POTATO DESSERT LATKES 
2 med. sweet potatoes, finely grated
3 eggs
1 tsp. granulated sugar
4 to 6 tbsp. finely ground almonds
2 tbsp. golden raisins
2 tbsp. chopped dates
1/4 c. chopped pecans
Salt
Oil
Powdered sugar
Sweetened whipped cream or Caramelized Applesauce

In large bowl, combine sweet potatoes, eggs, sugar and enough ground almonds to make thick batter. Mix well. Fold in raisins, dates and pecans. Season to taste with salt.

In large skillet, heat 1/4 inch oil to 375°F. Spoon a heaping tablespoon of potato mixture into oil, flattening with back of wet spoon.

Brown on both sides, about 3 minutes per side. Drain on paper towels. Dust with powdered sugar. Serve hot with sweetened whipped cream or Caramelized Applesauce.

Yields about 3 dozen latkes.
