GARDEN RICE SALAD | |
1 (6 oz.) pkg. long grain and wild rice mix 1/2 c. mayonnaise 1/4 c. plain yogurt 1 c. sliced celery 1 c. cubed tomato (drain a little) 1/2 c. diced cucumber 2 tbsp. chopped parsley 1/8 tsp. seasoned salt 1/8 tsp. pepper 1/4 c. chopped dry roasted peanuts Cook rice as directed on package. Cool. Toss lightly with all ingredients EXCEPT peanuts. Cover; chill. Garnish with peanuts. Yield: 4 1/2 cups. |
