RICE BROCCOLI PIE 
1 1/2 c. hot cooked rice
3 med. eggs
3 oz. grated Cheddar cheese
1 1/2 c. frozen chopped broccoli, thawed
3/4 c. drained can sliced mushrooms
1/4 c. and 2 tbsp. skim milk or reg. milk
Salt to taste

Combine rice and 1 egg and 1/4 the cheese. Press in 9 inch pie pan, greased slightly. Beat 2 eggs slightly, mix with broccoli and mushrooms and milk. Pour over rice. Bake 20 minutes at 375 degrees. Sprinkle remaining cheese on top and bake 10 minutes more.
